Wild caught Sockeye and Atlantic salmon can be very expensive. Fresh is more expensive.
The only place I've found fresh wild salmon is Central Market in Houston.

You can pay up to $25 a lb for it.

I buy the wild frozen Alaskan Sockeye from Whole Foods. It's very good.

And is salmon very expensive? What would the average cost for a filet be?

Less than $8 per Lb

For cat food salmon yeah, fresh wild caught Pacific NW is gonna be double that or more depending upon which run its coming from

Speaking of....springers will be here soon

So I went to Sams tonight and they had some fresh (as in not frozen) salmon. It was farm raised but looked really nice. $12 for 2 lbs so the price was really good. Brought it home and seared it very very quickly then finished cooking it by poaching in white wine, water, butter and lemon juice. Cooked perfectly, quite impressed for my first time ever cooking fish. Reduced some of the poaching liquid down with more butter and capers and a fresh squeeze of lemon. It was delicious!

It's frozen, but at Costco they have Wild Caught Salmon that is about $10.00 per lb. 3 lb bag with each serving vacuum sealed.

The copper river species are not the best for cold smoking, coho and sockeye at least. king can definitely be cold smoked but i wasnt feeling a $100 side of salmon for this.

plus, atlantic is typically what you want to cold smoke due to oil content.

The copper river species

Copper River is a marketing term, not a species. It is generally a coho species but can be sockeye or king and is just a way for them to charge more by branding it.
