for me I'd say the halibut tacos I had in Alaska
for $60 for 4 and they were small they'd better be good and they were.

Wagyu Beef Tartare from Sage at Aria Resort & Casino in Las Vegas, Nevada It was an experience, probably because I’ve only had it once. Best thing I can eat whenever would be chargrilled oysters.

I didn’t have that dish but I did eat at Sage at Aria the one time I went to Vegas and it was a fantastic meal.

There's no way I could possibly answer this with any accuracy.
I've had two really surprising bites that immediately come to mind. Both instances where I had really low expectations but, instead, was incredibly pleased by the tastes.
First was my wife's homemade guac when I was around 25. I'd had many opportunities to try guac in the past but was disgusted by the look of it. I finally had the nerve to try and, holy shite, it blew my socks off. I eat guac at every opportunity now.
Second was this place in Chicago, chef's menu, had some sort of cold/frozen/melt like snow foie gras. I hate liver...like really hate it. I'd had foie gras once before and was less than impressed. But this? Holy shite....took my bite and that luxurious, cloying foie gras taste just coated my entire pallet. That was an incredible and surprising bite of food.

We actually liked an Eel Swam up the Po at Francescana....though the Parm was superb.

A top-quality seared foie gras paired with a glass of Sauternes.
I order this whenever I can.
One dish that I had this past April comes to mind -
The soup at Guy Savoy in Paris. It is artichoke, truffle and parmesan soup. They give you whipped butter with black truffles in it to spread on layered truffle brioche. then you dip it in the soup. Incredibly delicious.

We had a group of friends while at LSU that would get up hungover late Sunday mornings and trek our way to the one on Florida Blvd. and engorge ourselves in Panchos. It may not be the best thing I've ever eaten, but damn it was good at the time.

The wife and I were on an Alaska cruise with another couple. The excursion she had set up in Ketchikan was cancelled at the last minute and she scrambled to find us something else to do. She suggested a crab boat tour, which I said sounded lame but there wasn't really anything else available.
The boat trip was about as lame as I thought it would be, but at the end we landed for a king crab feast. No fancy preparation, just king crab legs steamed and served with butter, all you could eat.
I have never had crab legs like this, either before or since. Incredibly sweet and tender.
Anyway, if you are ever in the area I highly recommend the George Inlet Lodge.

Italian food up there just hits different than what we get down here in Louisiana.
