KC- mostly beef with some pork, thick smokey sauce
Memphis- ribs and pork, not much sauce, generally a sweet smokey dry rub
Texas- beef, little to no sauce, tangy and smokey
Carolina- pork, the original, mustard and vinegar based

One of the best bites of bbq I've ever had is the whole hog sandwich from Skylight Inn that has bits of cracklin mixed into it. That kind of bbq doesnt show up on any bbq survey or dictionary but it is damn good.

I've been to dozens of BBQ places in Alabama from Muscle Shoals to Mobile and I've never seen one with white sauce.

Go to big Bob's. Also had a caterer in Huntsville serve it...tastes like a damn Ranch dressing knockoff to me.

White BBQ sauce is my prefered sauce with smoked chicken parts. It is basically Canes sauce without the ketchup

It a north Alabama thing and it was made to be served with smoked chicken not pork. I would also only recommend Big Bobs everyone else's tastes to mayo based.

Had Big Bob's in Athens a few yrs ago, really thought the white sauce was pretty good. I enjoyed it on chicken more than ribs, though.
