I generally still eat them up to the 4th every year. I have barely had any this year and I'm running out of time.

I did a boil this past Saturday and it's the last of the year for me. My saving grace is having an indoor area that is air conditioned on my ground floor that we set up a table and chairs to eat in comfort and away from all the damn flies that seem to come from miles around as soon as food it put out.

Thankfully this will be a longer season due to cold weather patterns this year, because I hope to do one last boil in 2 weeks when we return from vacation. Did some 2 weekends ago and they were still big and without overly hard shells.

I'm done. Did a boil on Sunday. Shells were hard and the crawfish were almost too big... took forever to soak them to a desired taste.

Usually shut it down around June 1 anyways.

It's brown shrimp season, baws.

Have you ever made "After The Boil Soup"? If not, look it up on-line under "Cajun Ninja's After The Boil Soup" video and give it a shot.

Next to crawfish bisque, it is my favorite way to cook leftover crawfish boil stuff. So rich and flavorful and a hell of a lot easier than real crawfish bisque to make.
