Are We Doing a Jambalaya Cookoff This Year for the Board?

I am interested in seeing a big jambalaya cook from the inside and learning the ropes. So I'd like to volunteer to help if I am available.

I cook in the festival and have made the finals a several times. Our group has 2 championships in the last 11years including the one my parents won. I've been cooking in the festival for 18yrs

That works for me I cook over propane not wood. I use my won seasoning. I chop pork onions and sausage and such the day before and bring the seasoned pork and prepared ingredients to the contest, I use my ingredients and guarantee they authent6ic Cajun if das cool let me know next time we may bring a pot and pitch in.

A noble concept. I wish the Jambalaya Festival in the "Jambalaya Capital of the World" would do it this way.
