Ponce

It's very easy to do.. Put a quart of water in a pot and set the ponce in the pot on med high. Brown it like you would a roast, uncovered turning to make sure it doesn't stick. Add ice cubes to the pot when the water gets low, after it's browned, cover with a crack in the lid and reduce the fire to med low.. Simmer it for appx 40 minutes more and The drippings will make the gravy.. Just make sure the gravy doesn't burn or get to low. there's really nothing to it.. It's like a sausage meatloaf with a thick casing.

I've only fried chicken a couple of time because it makes a complete mess.

Once. ONCE. The kitchen was an absolute disaster and it's one of those things that I'm positive that I can't do better than fast food.

I can go to Popeye's, wait because they ain't got no spicy ready, pull forward at the drive through, and still make it back home with great fried chicken way faster than I can even get the prep done and get the first batch out of the pot. If I want to get home a little slower and still beat the second batch out of the pot, I can go to one of the smaller local places and get even better chicken.

I have never cooked grits on the stove.

ETA: I'll save you the time.

I meant from scratch.
But,........where might I find one already made that just needs to be cooked like you’re talking about. A friend asked me, so I’m asking for him.

Chicken fried steak with white gravy.

I might be crazy but I prefer the cheap industrialized chicken fried steak patties to a real life honest to God breaded steak fried out. That being said, I have never made chicken fried steak from scratch but I have no desire too. I do, however, keep a rail of the Tyson frozen chicken fried steak patties to bake and make sandwiches with.

I love a good chicken fried steak but have never tried to to cook one because my wife makes a killer chicken fried steak. The gravy is heavy on the black pepper. God bless her but she can’t make anything else and absolutely wrecks my kitchen.

I've never cooked a brisket, and my and wife and I cook a lot. Just never got around to cooking one. I cook whole pigs, big jambalaya's, big gumbo's and crackings in competitions. I guess I have a reason to cook one now!

The best one's are at Lejeune Sausage Kitchen in Eunice. They're not open on Saturday though.

I also just checked Best Stop's website and they have it. It's called "Chaudin". I don't know if it's smoked. Smoked is better, imho.

Teet's in Ville Platte has smoked, available online.
