NYC roast beef sandwiches are better than Chicago beef sandwiches IMO. I think that NOLA/Louisiana style of a roast beef poboy is gross.

The tv show The Bear is set in Chicago and I thought the show was a horrible representation of the restaurant business including the desperate lean on incorporating the industry lingo.

This thread has made me want to get a beef for lunch today. The struggle will be deciding from where. The beef, bread, and giardiniera or sweet peppers are slightly different everywhere.

Its so fricking good.

I don't like soggy bread, but just getting wet so its dunked and that's it is perfect. Or dipped.

I had one at Portillos near Wrigley. I was underwhelmed. The meat was bland. the toppings were meh. Basically tasted like you'd think small marinated peppers would taste.

that's been my experience too, a bit overrated for someone raised on Louisiana cuisine but different regions of the country have different tastes

I, too, prefer not to have a sloppy sandwich that requires 15 napkins to eat it. I prefer to have my gravy on the side so I can dip it or pour it myself.

This is why the bread is so important you get a bread with a nice crispy crunchy crust yet has a soft enough inside to absorb the liquid so you got a crunchy crust outside soft gravy infused center.

Portillos Is good for what it is, fast food Italian beef sandwiches. FYI, there’s a Portilos right by the rental car return at Ohare if you’re doing business there. Better sandwich than anything the airport can deliver.

I don't think I ever heard anybody mention roast beef with NYC together. I've heard of pastrami with NYC though.
