Approx time for smoking 7.5 lbs pork shoulder

I have guests coming for 5:30pm. I'm accounting for 11 hrs at 225. Will that be enough??

You can always wrap in aluminum foil to finish if need be.

Anywhere from 6-8 hours at 275-300. It's pork, it won't dry out if you go a little quicker.

Smoke it till 2, If it ain't done put it in the oven at 350 for a couple hours.

If you're working on a hard deadline raise the temp to at least 250. The only thing that will do is cook it faster. There is zero reason to smoke at 225...unless that reason is "I just want it to take longer".

And I don't know how long that'll take you because I don't know your pit and how efficient it is or isn't. On my pit I can have that done at 8 hours (I'm wrapping at the stall and cranking the temp to 300) and if I put it in my Orion Cooker it will be done in 5-6hrs.

Put it in at 250. With 4 hours left. I'm planning on foiling at 275.

I'd rather foil based on internal temp, which is around 160-165 and taking to 203.

I did two that size last weekend. Cooked at 275, foiled when internal temp was 160 and raised grill temp to 310. Removed when internal temp hit 203. Total cook time on grill was 6 hours. Finished cooking about 4 hours before serving time, so I placed in 170 degree oven until it was time to serve. It was awesome. I think it is better to finish early and hold. The hold helps.
