Anyone tried Gonzo’s BBQ

Gonzo’s in Luling

Someone had the brisket boudin a couple weeks ago that I tried and it was really good and that was a couple days old and reheated. I need to get by this place. Only open on Friday.

Sounds like a place we need. He’s using a Mill Scale Smoker too which built Aaron Franklins smokers before they went out on their own.

Mill Scale Metalworks

They have some good stuff. I’m thinking of getting the open fire grill.

Anyone here have one of these smokers or a Moberg?

I'm contemplating making the ride down on Friday. Their stuff looks fantastic. I think a couple of posters have been there recently.

I’m not a politician so I don’t put a lot of stock in the voting game around here.

I’ll probably head down Friday to as I need to be not too far from that area myself and should be a nice day. I’ve heard nothing but good things about it. Say hello. I’ll be the a-hole in line.

Definitely worth the trip. It’s the best Texas style bbq I’ve had in Louisiana. Their sides are slamming too

That cookie butter bread looks like it would put me in a mild coma especially after that franklin sandwich.

Everything he has is great. Be sure to pre order because he usually sells out within a couple hours. He does very well for just being open 1 day per week.

I had it at Crescent City Blues and BBQ one year and it was legit.

Make sure you preorder if you are going. Preorders are limited now, so if you haven't ordered, get on it.

If you wait, expect 50 people or so in front of you.

The apple butter bbq sauce is pretty damn good, don't sleep on it.

Pork belly burnt ends are some of the best I have had.

Beef ribs when they have them and pastrami brisket on the rare occasion it is still made.

Sides are good, don't have a favorite or a must have, but they are not bad.

Great question.

Have only been told that the catering aspect covers some of his other time. Also think he may still have a day job, but don't know for sure.

I’ve posted some pics before on here I think, he is very good. Pork belly burnt ends are great as another user said. I told him he didn’t even need to add any of these side sauces like he does sometimes ex. Mango habanero. His sleeper to me are his pickles, extremely good. I am getting some stuff from him for his Christmas pre-order, Mac and cheese is very good and the grits are amazing. I should be down there next Thursday night pestering/helping him out for his Friday service. He doesn’t do them often, but anytime he puts his Cuban on the menu/pre-order list, get 2 of them and don’t look back!

And to answer the OP, I cooked on two Mill Scale smokers last week at Goldee’s in Fort Worth. Those things were amazing to run, extremely efficient yet you have total control over them. I contacted them about building my 250 last year but they don’t build that small anymore and recommended my current builder to me.

It's hard to pivot out of what you know. I did. It was tough at first, but clearly he has a gift. Change is scary.

I know he had some worries opening in Luling. Not going to lie, I would hit him up a lot more often if it wasn't so far away, and I make the trip from NOLA to BR 2-4 times a week and that is only a 20 minute detour.

Trying to to a brick in mortar in Luling is probably cheaper to run, bit the foot traffic is going to be much less.

I've had his stuff at his pop ups and at fests. It was pretty good.

It wasn't change my life good, but it was good. If he popped up again, I'd swing through.

I bet it's better when he's working with a full set-up. I'd definitely do that if I didn't have to drive to Luling for it.

I will say it has improved greatly from his earlier popup days.

But yeah, driving to Luling in the middle of a Friday isn't something everyone can do.

I need to meet this guy. I have great spots for him to rent in nola if he wanted.

I love blue oak, but nola can do better.

The best bbq places in Texas are in random small towns.
