I glanced at this thread yesterday and have only decided to wade in now. I take food as a passion( my SIL told me it would take years to learn how to make pastry/icing roses, it took 15 minutes) that I have been blessed with knowledge and skills about over my life. The capacity to share that knowledge with others on this site is another blessing and I love it. If the above is serious I ask forgiveness.

Am I to assume that Sysco is an evil, racist, anti-Semitic organization bent on slowly killing Americans via trans fats and other non-organic food additives?

that's not what people are talking about, i don't believe. sharing information is typically good, especially if that information is objective

I'll be one of the survivors, I only purchase my foodstuffs from Whole Foods or restaurants that have close relationships with farmers. I prefer animals that were named prior to slaughter.

This is due to the fact that:
1. most restaurant owners cant balance a check book
2. most chefs are worse at it
3. many spend an arm and leg on build-out unnecessarily, and could never recoup their initial investment in a reasonable amount of time
4. If you build it, they will not come, no matter how "good" your food is. You have to market your business beyond word of mouth
5. Food costs should be around 31% - 33%. If your raw materials cost more and you need to charge more to sustain a very particular parameter of COGS, that is a direct relationship to the local economy, and NOTHING to do with the "want" or "need" of the public. Either they can afford it, or they cant
anybody who opens up a restaurant and finds themselves shocked at the "astronomical" costs of food is a fool and didnt do his/her research.

Once upon a time, I was obsessed with food.
I was miserable at my current job as an engineer and wanted something different. Food was an escape. I had always been brought up eating in fine restaurants and with two parents who knew how to cook. So I decided one day i would quit work, enroll in culinary school, and become a chef. Luckily I got cold feet and didn't do it.
Anyone who takes the time to post on this board is obsessed with food to a degree. It's a fun subject to discuss and one that's brought up often in Louisiana. For a short time I had a food blog going (mostly just to scratch my itch with writing as I flip-flopped back and forth with horror writing).
Like all things on TD, people take shite overboard and many assume a personality unlike their real selves, since they are hidden by the anominity of the Internet. I haven't posted here in a little while, mostly due to work and deadlines with writing, but I plan on doing it more. I miss the F/D board.

You guys need to let up on Mike. He may go overboard but he does raise some good points, imo. You're letting personality and politics get in the way.

I understand exactly what you're trying to say but I don't appreciate you throwing Dempsey's name around like you know what goes on in the kitchen. I know you had a bad experience with green beans there, but there are a lot of people who put a lot of sweat and effort to make rouxs, roast & gravy, salad dressings, etc. in house every day. I'm no longer affiliated with the restaurant but what you're accusing Dempsey's of (based on green beans) is insulting to my father whose principles are to put out higher quality food than the Sysco pre-made and packaged shite. The man has a garden behind each restaurant and grows his own herbs for God sake. Who else in the state does that?
