Anyone have a good copycat recipe for a Darrels Special?

Was going to make a quick sandwich for dinner and when I reached for the mayonnaise I saw a jar of pickled jalapeños and decided to make a quick jalapeño mayo. Got me thinking how much I used to love a Darrel's special and how it's been about 10 years since I've had one. Doesn't seem like it would be very hard to recreate a pretty close version.

Do they not roast any of their meats. I had heard they did in the past by I have not lived in Lake Charles for a long time.

What did you not like about it? I wonder if the quality has went down. Years ago most on this board said it was one of the best sandwiches they had ever had. Now everyone shits on it.

Had one on a couple of occasions. Good sandwich, but it aint a true po-boy and it wasn't "all that"... maybe because LC has had such few options in the past, it became "all that" by default?
