Anyone experiment with bacon in jambalaya before?

How'd it come out? In my head this seems like a great idea, you know, because it's bacon .

I've used a couple of pounds to get drippings for the onions I brown and then added the bacon to the jambalaya. Nothing bad about it at all.

I love bacon in jambalaya. I usually cut up a pack into small pieces and fry it before I put the pork in. I know it's not competition gonzales-style, but it's a great addition.

I've used bacon grease to brown the chicken and onions. Done that for red beans and rice as well, and comes out great.

Never thought of actual bacon before.

Usually do this when we tailgate, cook the bacon in the pot, save the grease and either snack on it while cooking or eat it with biscuits. Never put it back in the jamb though.

Use for grease and drippings.
We leave out and just snack on it
Bacon is too overpowering

Seems like it would taste good, but will create a lot of extra grease, since the pork and sausage will only add to it.

This. I dice the bacon and cook it first. Remove and reserve the 3/4 cooked bacon. Use the grease to make the roux. Add bacon back in along with the sausage towards the end. I personally prefer to use the black peppered bacon to give a little extra kick but that may just be in my head. I never noticed the bacon to "overpower" the rest of the ingredients. But I love the pig so that is me.
