Anyone ever smoke deer ribs?

I have NEVER been successful with deer ribs.

There isn't too much meat on them to start with unless you leave the backstrap attached. If you leave the strap, get the sinew (that silver crap) off. You can smoke them and cut into meat lollipops.

Here is a recipe I have used before as a guide.

I have a friend that takes all the ribs but I don't fool with them.

But this thread and the sausage thread made me set out a big neck roast to thaw. I'll cook it Saturday and let them go a long time in a braise and they come out nice.

Deer meat in general seems way too lean to do well on a smoker. We tried smoking a deer roast once, and it turned out awful. We kind of expected it to not do well, but it was even worse than we expected.

Never tried ribs though.

I smoke deer hams a pretty good bit. They turn out well. A deer rib is worthless imo.

I've taken them and boiled them in some seafood boil seasoning, picked the meat off the bones and shredded it then put that in a crock pot with onion, garlic, bell pepper, celery and a nice helping of your favorite BBQ sauce, some Worcestershire sauce, salt and pepper and let that cook down for a few hours.

They taste fine and are like sloppy beef, but even with all that cooking, they are still a bit stringy.'

Next time I'll use my pressure cooker to see if they turn out more tender.
