The fat isn't supposed to be removed, unless it's your preference. Just the inedible parts (face, gills, and reproductive organs on the underside with its flap).

Back when we were crabbers we ate soft shell crab like once a week (we grew them). We always cleaned the fat out before frying them. Not just us but everyone else we knew did this as well. I just find that crab fat does not fry well.

I agree, if they're not cleaned before frying it can give them an "off" taste. But... when done properly, a soft-shell crab is one of the best foods on earth.

Those that eat it have my respect seriously. I wonder who came up with eating the crab when it's soft and is it doable for ANY crab or just blue crabs?

I ate at Chestnut a year ago.

They should be ashamed of themselves for the bread pudding they served.

Bisque was sour.

Risotto balls with lobster sauce was good

Filet was good.

Trout was terrible. Your nephew and his exec chef need to work on it some more.

Interesting feedback. I've never been there so I can't give my opinion, but in defense of my nephew, he has finished 2nd in several chef competitions in that town.

Owner was real nice and the place was nice. I know how kitchens are, sometimes it's just rough nights.

The two good things we had prove the reviews right that it's one of the nicer place in that town. Was an off night probably.

Eating fish scales would be likened to eating the hard shell of a crab....now fish skin on the other hand, absolutely on a crispy piece of snapper or something of similar quality.
