Try the tripe at Primitivo. Not a huge tripe person either due to texture, but it is really good. They really nail it.

The last time I had Bun Bo Hue at Danh's Garden on Youree it had the blood cake. They may have eliminated it since then as it was a while ago. I can take it or leave it, though.

The tripe at Primitivo is outstanding. I am fairly certain it is a holdover from a mano. Or a very close proximity to it, but man is it good.

Not really. Alot of the people in S. Louisiana made their way from the area that is now Nova Scotia and Norther Maine. People up there seem to eat a larger version of the same critter you are referencing. I suspect the first cajuns and others were thrilled when they found an abundance of tiny lobsters down here
