Jacob's in LaPlace is the best that I've found.

I think Jacob's is best, hands down. If you don't want to leave nola Cochon Butcher has pretty good andouille as well.

No, Besh was using Don's and Jacobs, and now he's using Poche’s. From what I gather, there some kind of a family tie in or friend thing in there.

Whatever you buy, I would avoid Veron's. I bought some once out of desperation and was very disappointed. The casing was damn near as tough as plastic.

I don't recall seeing those instructions. Think I would have followed them had I seen them. Must be really fine print.

And thanks.

ETA: Why would I want to buy andouille I had to decase before I could use?

Why though?

I've cooked with it before, and I just don't understand that. It's decent andouille, but seriously, why make andouille sausage that you have to remove the casing, which makes it a sausage in the first place, in order to consume it?

i like poches as well, but I am close and stop by Laplace to get some there as well as In reserve when I am there too. Verons is good I think, kind of bland but VERY lean.

Wayne Jacob's smokehouse in Laplace, on west 5th street hands down, also has a great lunch menu. Jacob's on Airline just doesn't do it for me.
