Made a batch of the uncooked 9/27, giving me 3 quarts. Going to pop open one of the quarts this Sunday to get a sense of where it's at, where it may be going, and if it's worth making a couple more batches to bottle up and serve as nice, small bonus gifts to family. That should still give me 2+ months of aging time on the new batches. The sip I tasted when making the first batch was definitely very hot (alcohol) so needs time to mellow.

I’ve been using AB’s recipe for years. ( just made a batch). My aged batch is a year old and tastes wonderful (made it New Years Day).
My experience with his aged recipe is that it develops a metallic taste in the 3-4 month range and then mellows again. I have seen reports that mirror my experience. My recommendation is keep aging if this happens and see what it’s at about 6-9 mos.

I have a batch that will be 3 weeks old on Christmas Eve. Don’t have enough patience to wait much longer than that.

That’s why I make a second batch on New Year’s. I’m usually tired of by then and can let it rest some months

I’ve been making Alton’s recipe for years. Just drank the last of a batch that has been aging for 2 years. It is seriously fantastic.

Do yourself a favor and make whole batch. Drink half this holiday season. Bottle the other half seal up tight and put in back if fridge. Shake every month or so and don’t open until Thanksgiving. You will be very glad!

Are you making the one with egg or without or for all that make their own what recipe are you using. I would like to start a tradition here at my home and want to know what is the best recipe to use.

I don’t have cognac, but I have plenty of brandy. Do I need to specifically get cognac, or would the brandy be a reasonable substitute?
Also, does white rum versus dark rum matter?

Does it taste better as it ages? Maybe that’s a stupid question but I would like to make some.

It does taste better. It smooths out and the burn from the alcohol reduces greatly.
The nog holds in your mouth after you swallow as well. It really just gets better and better
(no way I could say that on the ot)

The following is my opinion, my tastes and my experience.
Cognac>brandy. You can make it with rum/ bourbon or either alone. The rum/bourbon/cognac is superior. Brandy added very little depth IMO.
