Alternative to flour in roux

Sorry if asked before.

What is the best alternative to wheat flour (all purpose) when making a roux. Is rice flour any good? I would think almond would give an unwanted flavor.

are you trying to avoid a Celiacs/gluten issue?

I’ve heard of people using potato flour. It’s fairly common in German & Russian cuisine.

Amazon Link This stuff was awesome. Ate the last of the frozen gumbo for the last cool front and you really can't tell the difference. The linked thread I made has all the tips/info you could want!

I make a roux using 3 tablespoons of almond flour and 3 tablespoons of coconut flour and this time I used 1/4 cup or so of coconut oil. It doesn’t taste like almonds or coconuts. It taste like a damn fine gumbo that everyone tears up. I also make my own stock which I think is key. Several options out there

If you can find Savoie's buy it! the instant roux and the brown gravy mix they are the best I have found after over 15 years of trying.

Cup 4 cup has my vote. Sticks pretty good when you add the veggies but its the best I've found so far. Savoies is good but it has a funny flavor to me.


I made a GF gumbo this weekend and it was the best one I've ever made.

Different taste for everyone but Savoies Gluten free gravy mix is very good. I use it to thicken stews and such. I bought some roux but haven't tried it for a gumbo yet but will soon.
