Alligator Ribs

Have any of you baws ever slapped a rack of these on the pit or slow cooked them in the oven?

How are they?

The fat on an alligator tastes absolutely terrible, I am not sure you could carve it all off.

Curious if someone has come up with some method that works like trimming as much as possible and soaking it in buttermilk / marinade.

Interested to see the replies.

You're indeed correct about the fat. One time I got a piece of blackened alligator appetizer at the chimes. About threw up in the restaurant. Not the sidetrack this but does anyone ever tasted iguana. I know they shoot them in the keys and in South florida. I haven't looked it up to see if you can buy them.

I've spent a fair amount of time with people who depend on alligators for (a portion) of their livelihood. I have never known those same people to consume or suggest consuming alligator ribs.
I feel like this may be a case of "just because you can, doesn't mean you should".

I lived in Miami for years and I'm there right now. I've seen the homeless, especially downtown Ft. Lauderdale, catch them and cook them on skewers over metal trashcans. I've never seen it for sale, but you can definitely eat them. There were some in the backyard today. They crap all over the pool furniture and eat my girlfriend's flowers.

The locals call them "Chicken of the Tree" and swear they are tasty.

Alligator fat has a distinctive bad smell when it is being cooked.

I have a friend who lives on a bay island in Honduras, and he says iguana tastes mild, just like (you guessed it) chicken.
