Went to Chicago in the spring of 2018 for my birthday. On a whim, decided to see if my girlfriend and I could get a reservation. Well low and behold there was one table available so booked it a couple weeks before flying out.

I had the highest expectations possible for my meal, and I felt like the dinner exceeded every one of them. The absolute best meal I've ever had. The first dessert course was even a total miss for me, and it doesn't affect my opinion of the entire meal.

Couldn't recommend highly enough.

Agreed. Even if you don’t love fine dining, it transcends culinary into life lessons.

I haven’t been to Alinea but I went to The Aviary and Next.

Cool experiences but, and this is a quibble, Achatz is a total and absolute control freak. Which makes sense given his pedigree, illness, focus, etc... after a while I thought the experiences got a little pedantic, the explanations boring and long winded, and the hero worship a little much. The food was absolutely delicious (at Next the theme was Nouvelle Cuisine II) But I thought the drinks at The Aviary were weak. One thing that really bothered me about Next is I asked if I could see a wine list and pick out a bottle. It’s French food I want wine to match. The waiter told me “chef requests that you get the pairing so we don’t have wine by the bottle.”

Just rubbed me the wrong way.

My only similar experience was at Acadia in Chicago. It’s a two star Michelin. We got the wine pairing and by the ten course I was bombed. Don’t really remember dessert but I think it was good.

The best meal someone can have is the one they cook themselves and realize it could be better. Paying for a fricking ticket and then hundreds of dollars more for some douche bag and his “staff” to cook a tiny portion is just stupid. No other way to put it.

And the experience? Over the top servers who act more like ballet dancers isn’t an experience. It’s just bull shite

But in my opinion, you’re dead wrong and are missing out on amazing dining experiences.

Everyone has their thing rather that’s sports, hunting, geotagging, etc. For some people, it’s the experience and appreciation of a dinner like Alinea.

I’ve yet to go but it’s for sure on a short list of places I want to go. There is no homecook in the world that can put out the food like Alinea no matter how many times they try.
