Just chicken stock. I would normally have made stock from shells, but these were tails from a boil at someone else's house.

To be honest with you, there's not a whole lot of difference between the two as far as method (roux, trinity, stock, simmer, protein, simmer) but everyone has their own definitions. I call it a stew because [1] I keep it thicker than gumbo, [2] I wouldn't put tomato or corn into my gumbo, [3] I wouldn't make crawfish by itself into gumbo.

From what I've read lately, the bayou Cajuns don't put roux in their gumbo at all but they put it in their stews. So for them, this would be a stew no question.
