The story says

I would guess this is an answer to the seasonal fluctuations in prices.

What flavor dominates? Would you mix these three?

I recently had something similar at Vickery's on Shem Creek (Charleston area) and it was among the best seafood dishes I've ever had.

I always enjoyed the old BonTon half and half crawfish and shrimp etoufee. THey were separated by the bread in the middle and it was like 2 separate dishes to eat.

What's the hang up on mixing shellfish? I'd devour that.

I make a seafood pasta with all three, and usually oysters, and it's pretty killer.

No “hang up”.

Crab is delicate and the star of the show when I make dishes with it.
Shrimp can dance to the same song, but I won’t include crawfish.

Crawfish is a strong flavor and overpowers delicates like crab and shrimp.
