A Twist On Roasted Asparagus

So I did it a little bit different tonight. I sliced a large shallot and one clove of garlic very thinly. Then I heated a skillet over medium high heat, adding about 2 tablespoons of olive oil and 1 tablespoon of butter. In went the shallot , then the garlic, and on top I placed the asparagus. I seasoned with a Greek seasoning, tossed the asparagus to coat with oil, and then popped it into a 425° oven for a couple of minutes. The shallot gave an extra nice flavor to the asparagus.

When using small amounts, I prefer shallots to onions.

I roasted some with shitakke mushrooms the other day. Liked the combination. A little olive oil and finished with a bit of balsamic.

My friend Paulie has a wonderful system for doing the garlic. He uses a razor, and he slices it so thin it will liquify in the pan with just a little oil.

I love shallots on asparagus and on lots of things. Shallots and green onions are my favorites along with leeks.
