A Little Chicken and Sausage Gumbo

Nephew’s wedding, mid week and in Arkansas. So, I made a roux. The flash made it look lighter than it was. Threw in some veggies. Got it simmering. Threw in a few green onions. Waiting on it to cool enough to go in the cooler. Needed around five gallons. Looks like I may have made a gallon or two to much. Hate it when that happens! :)

Not scared. Just doing it for the masses in Arkansas. Don’t know how faint hearted they are. :)

Mine is in the fridge. Up till 9 last night finishing it and cooling it for the fridge. Gonna put it back on today and simmer it. Probably after lunch.

Mom wasn’t here this time to assist. Or to UNDER spice it. An affliction she’s acquired as she has aged. My nose will be running by the 8th bite.

Wanted to add my own question. Ask the OP as well since he knows his way around a roux.

What gumbo abominations have any of you seen?

Have you had any that you quietly thought “WTF?” But you were wrong about and it was delicious?

Someone already covered tomatoes.

Mine was overhearing someone mention red onion!! Dear lord!

Freeze it, pack in styrofoam shipping box with a bunch of ice packs, tape that MFer real nice and ship (overnight vs 2-day depending on the weather).
