Last night I cooked two on my Blackstone. I finished them with garlic butter. They were delicious.

I typically buy boneless. Every once in a while, our meat market will be out and I will get a bone-in. too much trouble and to much extra stuff and waste.


I will take a boneless any day of the week

If you are buying an upper 2/3 or prime, it really doesn't matter.

This is why I've never been interested in tomahawk cuts. 25% bone weight. If you pay $30 per pound for a 40-ounce tomahawk, about 10 ounces of that is just bone.

Where are you people shopping? Most meat purveyors, including places like Costco and Sam's, sell bone in cuts for at least a couple dollars/pound cheaper than boneless. For 2 reasons. One so you're not paying for bone and two because they (bone-in) require less trimming and work on the butcher's part.
