4gal fryer. How many lbs per batch

How many pounds of catfish can you fry in both baskets per batch? Trying to plan timing on about 40 lbs worth.

depends on the size of the filets. I usually just line the bottom of the basket with filets and then drop it in. Gives them plenty of room to move around when the float, and it keeps the temp manageable when the fish is cold.

The size/volume of the fryer is only one factor, as it only determines how much you can physically fit in the fryer at once. That doesn't mean you can FRY that much at once. Your temp recovery on that fryer is the real factor in play.
Putting too much fish in there at one time is going to drop the temp in that grease and take forever to come back up, in turn giving you shitty fish. Not something you want to do if you're feeding so many people that you need 40 pounds of fish to get it done.
That being said, you can probably fry 3 to 4 pounds of fish in there per batch without any trouble, you're just going to have to play it by ear. I remember being able to put no more than 2 pounds of seafood in each basket in the commercial kitchen deep fryer when I was a fry cook. The bigger problem is frying that much fish without being able to filter that grease. That oil is gonna be SHOT by the time you get to those last rounds of fish.

I fry in a black iron pot on a stove. I out 1 gallon of oil and have not problem doing 1 pound at a time. You could probably do 2 1/2 to 3 pounds safely. As mentioned, the thing that matters the most is the time it takes for your old temp to recover.

Is it a propane fryer like the RV works kind? I have a 4g like that and I line the bottom of the basket then drop a cpl in right after dropping the basket. Ill have the fire ripping and it can usually hold temp working it like that. Pre batter everything and have your cooling racks ready or help. If you take too long to drop more fish the temps will rise fast.

Ah yea ok that should work. Just watch the temps. I'll have it all battered and ready to roll because you don't want to take too much time or it gets hot fast and its slow to cool as you know. Once you get rolling you will get a feel for how the temp changes when you drop a basket. They end up staggered so its not too bad.

I fried 10lbs of fillets in about 20 minutes in my RV a couple weeks ago. And that was just drinking beer and frying fish, not trying to churn them out quick or anything. With 3 4-gallon RV’s going and 3 people manning them I would think you could roll thru 40lbs in 30 minutes easily. Temp drop and dirty grease are not near as big a problem in those 4-gallon RV type cookers as people think. They’re fish frying machines

100% I love mine. I am about to get one of the aluminum ones. I am going to see if they will put another set of swivel wheels on it tho so I don't have to lift to roll. They made it sound like they would last time I ordered some from them.

Make sure to get your temp to about 375 before dropping cold or frozen filets in.
