1st Time Cooking Ribs
What am I doing wrong?

Bank the coals to one side at about 225 degrees. Use the 3 2 1 method. 3 hours unwrapped, 2 hours wrapped in foil, then finish unwrapped the last hour until done.

It doesn’t hurt to also keep a spray of apple juice laying around. Keep spraying them to keep them moist very 30-45 min or so while they’re unwrapped. The 3-2-1 method is the winner. You can also go 2-2-1 method. Or, cook them in the oven for 2 hours and then throw them on grill afterwards to get the crispness.

Boil the ribs before smoking? I heard that's how you make soup.

I don't warp my ribs...5-6 hours straight through.

I did some 2-2-1 the other day at 250 that came out great.

You are searing them with direct heat over those coals. Use indirect heat.. What kind of grill do you have?

So, wrap in both of our situations is more to bump in the process. Pink allows for more smoke and foil is more of a tenderizer. Also wrap allows to add things like butter, honey and more spice, etc.

That pic above is not any of that. Direct heat on ribs is a nogo.

He meant boil them and then apply direct heat like in OP picture. not boil and then smoke.

What you're doing is "grilling". What you should be doing is "bar-b-quing" or smoking. Ribs need time and lower temps.

Not really. On a weeknight I go short time and high heat with indirect grilling.

Light coals and place to one side of the grill. Soak some wood chips and add on top. Place seasoned ribs on the cool side.

Let go for about an hour - hour and 15 minutes. Sauce up and go for about 10 minutes.

Flavorful and tender without all the time.

Quickest I've been able to do ribs is about 2 hrs. I don't mind a quicker cook because I like mine a little more chewy anyway. Most people think that ribs have to fall of the bone to be good. They've been brainwashed by the "TJ Ribs" products.
