Look, Bobby Flay, he did say it was his first time and admitted to some of it being overdone, especially the slices that came from the two smaller cuts.

You can still cook it in its own juices.
I cook it until it is about 90 degrees then cover it in a pan and finish it. I take it out at 125 for mid rare. Nice au jus that I add to the bag or sliced roast beef.
