I tried making blackened fish at home. Never again. Too much smoke. The hood vent couldn't handle it.

Most people blacken outside in cast iron on the grill unless you have a very strong vent hood.

Did he say he was from somewhere else? I always read he was born near or in Opelousas.

I've just always heard that he would say he was from Lafayette or something other than Opelousas. Rumor was because he was run out of Opelousas for not paying his creditors.

My late wife graduated with Prudhomme from Opelousas High School. As the article points out he went by the name Gene back then.
