I think you have the right idea. Three nice options regardless
I think west takes back over, but I'm not 100% certain. They had arguably their best offensive game with ware last week. I'd just wait and see

Flex: it has to be Watkins or David Johnson. Watkins has been so up and down, at least with Johnson you're guaranteed touches. I like Johnson here.
TE: Witten hasnt caught a TD since week 1, and has been over 44yrds only ONCE in his last 7 games. I think McDonald's last 2 weeks is worth a gamble. EVen if he busts, its not like you'll be missing out on anything with Witten.
