My dude made a gumbo last night and we let it sit overnight knowing that it would be perfect today. It did not disappoint.

Chicken and andouille, and he used duck fat for the roux. Added hard boiled eggs during the cook and served with a side of potato salad. Shake or two of Crystal on top.

Best one he's ever made!

Cleaning out the fridge. A little thin gumbo. That lump crab meat was borderline fresh. I hope I survive the night.

Although I don't do low carb, I try to watch calorie intake and I use those Xtreme Wellness tortillas. Not too bad.

I make a wrap with 2oz deli meat and a lot of vegetables and a wedge of Laughing Cow spread nearly every day for work lunch. Less than 200 calories for the whole thing.

Mission came out with some new ones lower carb than their carb balance. 3 grams net carbs and 70 calories each.

Wow. I like the carb balance but the lower carb ones must be one step above cardboard.

Swedish moose meat balls.

Didnt have any lingon berries to make a sauce so I made a tundra blueberry rosemary sauce

The Xtreme Wellness are 50 calories. Taste is not fantastic, but it works fine for what I use it for. .. which is either a cold deli wrap or a quesadilla. The flavors of the stuff inside is enough to overpower the tortilla.

The "extra thin" corn tortillas from Misson are nice to use too. I drape them over the oven rack grates and bake for a few minutes until they hold that shape. Keeps them from tearing since they're super thin. 120 calories for three of them.
