Trying to come up with a recipe - “Crawfish Boil Eggrolls”

We started passing around an idea of crawfish eggrolls. Then we got to what to put in the center besides crawfish.
We were thinking bread crumbs, etc.
Then I mentioned corn from a boil, and that led to all kinds of added things to a crawfish boil, onion, garlic, sausage, etc.

Anyone have a recipe like this or want to add to the idea?

Go try the voodoo crawfish eggrolls at New Orleans Food and Spirits- they're great.

How about a southwest style egg roll with rice, black beans, crawfish? Similar to Chili’s southwest egg rolls with crawfish. Just a thought.

Make the onions and garlic a paste.
Clean corn off the cob.
Crawfish
You’ll need some lightly boiled carrots for some crunch.

Well.. potatoes are a big part of boils.
So use that as filler instead of rice.
Maybe in a hashbrowns style.

Crawfish
Shredded fried potatoes
Corn
Crab boil
Diced onions
Lemon and orange zest

Since there is a cabbage and carrot aspect to eggrolls and the new trend is Brussels just shred them.

What are you talking about? How about allowing the crispy wrapper to give the crunch?

ETA I would add some shredded cheese into the mix so they get a little gooey.

It would be labor intensive, but I feel like adding the crawfish head fat to the mix would really put these egg rolls over the top.

Take a premade eggroll.

Drop in boil.

Pull out and let dry?

Not boil-flavored or an eggroll, but these are the best quesadillas I've ever had. A few small tweaks and it would be in the zone. We sold thousands of these off the food truck back in the day.

Filling, cook this stuff up as you would for an etouffee:

2 lb shrimp
1 lb crawfish tails
1 lb andouille diced
1 yellow onion chopped
1 green bellpepper chopped
4 cloves garlic, diced
salt, pepper, cayenne, cumin to taste


Mango & Red Onion Salsa, mix and refrigerate overnight before serving:

3 mangoes diced
1 red onion diced
1/2 yellow onion diced
3 roma tomatoes diced
1 bellpepper diced
1 jalapeno deseeded & diced
1 tbsp roasted garlic puree
1/2 bunch cilantro diced

Garlic, onion, crawfish, corn and andouille. Add cream cheese to mixture. Add mozzarella. Cool mixture before stuffing in egg roll. Pretty much a copy cat version of New Orleans Seafood and Spirits.

We made these for Easter and they were the big hit. I need to come up with a better sauce though.
