Recipe says stuff with a jalapeño. I don’t want a jalapeño. I thought an apple would be better.

Agree or disagree?

I have done this before. I would stuff 2 with apples and 3 with fresh deer sausage. I am partial to macintosh apples. I would then smother with mushrooms and onions and brown till tender.

I have stuffed apples inside wood ducks before. It was ok but not my favorite. Sear fresh deer or Cajun sausage in cast iron dutch oven, sear plucked ducks, sauté 4-5 onions bell peppers celery until browned, return meat, add water and chicken broth, put lid on and put in oven at 400 degrees for three hours and tell me what you think. Don’t forget Tony’s!

Go for it, can’t be bad.
I recommend stuffing carcas w/ Teet’s smoked pork sausage and/or a sweet potato

I did a maple syrup, salt and pepper smoked duck at thanksgiving and it was delicious.

Smoke it until you hit temp, then toss it on a high temp bbq or oven to crisp up the skin.

I stuffed a wood duck with green onion sausage, smoked him, and made a blueberry glaze for topping. It was awesome.

If you want apple, go for it
