What to eat for lunch?

What to eat home made for lunch? I am pretty happy with my variety when it comes to breakfast and supper but it seems lately, I have been stuck in a rut when it comes to lunch-basically peanut butter and jelly sandwiches. Any suggestions? I need a bit of variety that doesn't take too long to prepare.

PB&J for lunch? Everyday? That sounds brutal. Been doing lean ground beef, taco seasoned, and white rice. Easily 3 years on this. It's a good food to cook in bulk. It keeps in the fridge very well.

chicken rice and veg is easy to meal prep on a sunday and eat all week. gets boring and you end up just stuffing your face to not be hungry, but you save some $ and i'll still go get lunch somewhere on fridays with a drink or 10

Quesadillas are pretty easy to make; you can just get some refried beans, cheese, and salsa and you have a tasty lunch. If you get a rotisserie chicken from the store you can add some meat for very little effort.

So a PBJ for lunch every single day is brutal but white-people taco bowl every day isn't. Got it.

I love a good chicken salad sandwich on sliced wheat with chips for lunch, It's a light lunch and not heavy a po-boy sandwich and fries for lunch.

Thanks all! All good ideas and I will add them in to the menu this week. Of course, I do like my PBJ sandwiches but time for a change.

I like doing sheet pan meals for lunch. Chicken cut into 1-inch cubes. Throw whatever chopped veggies you also feel like having. My usuals are mushroom, bell peppers, red onion, and yellow squash. Just use whatever sounds good to you.
I'll toss these in avocado oil and salt & pepper, then convection roast @ 425 for 20 minutes. Serve over rice or grain of choice. I'll use a little dressing on top also for extra flavor & variety
Prep and cleanup takes less than 10 minutes, so it's a pretty easy meal in about 30 minutes. Makes plenty to last a few days as well.

Tortilla pizza. Easy, tasty, quick.
Spread a thin layer of pizza sauce on the tortilla, top with shredded mozzarella, and then toppings of your choice. I usually have pepperoni in the fridge and sausage crumbles in the freezer.
You can get fancy with pesto or chimichurri sauce in place of pizza sauce, and top with shrimp. All the sauces can be from a jar, so it’s still quick and easy.
The first two are on medium sized flour tortillas and the shrimp one is on a burrito sized tortilla.
Bake at 350 till cheese is bubbly, 10 to 12 min.

A burger. Hot dogs. A deli sandwich. Any salad. A grilled cheese sandwich with canned soup. Leftovers. (Cold pizza rules.) A charcuterie plate. A simple pasta dish. There’s nothing wrong with having a breakfast dish for lunch. Steak and eggs would work fine. The possibilities are endless. Whadya got? Eat it.

Wraps. Grab some burrito size tortillas, ham, turkey, lettuce, tomato, pickle, mayo/mustard. I sometimes get smaller wraps so I can make 1 ham & 1 turkey. Warm it up or if you have an air fryer/toaster oven, toast it to melt the cheese

Since it sounds like you're already eating light for lunch, you could probably substitute with any protein pack type lunch. Meat (either cured or cold cuts), cheese, nuts. Or Greek yogurt with some granola/fruit.

Throw some chicken breasts in the crockpot on a Sunday and season any kind of way. Leave it on for a couple hours till it is shredded. I did buffalo yesterday and throw on some wraps today. Super easy.
