Vernon Roger’s Crawfish Stuffed Meatloaf Recipe

I previously had Vernon Roger's cook book until we flooded in 2016. I can’t find another one because it is out of print. I just Googled 'roger's cajun cookbook' and found this forum with others talking about his cook book but could not reply because the discussion is closed. So, I started my own topic hoping someone can send me the recipe. I remember most of the ingredients since I made it a lot before but need the actual recipe to make sure I have all the ingredients. Thanks in advance!!

I have the book. My copy has a meatloaf recipe, but there’s no crawfish in it. You want it?

I have the Vernon Roger cookbook from 1987, but I don’t see a recipe for crawfish stuffed meatloaf. He does have a meatloaf in there

Google pops up lots of printings for sale.


My copy is a replacement. Lost the original due to drunken debauchery at a St Joe Wild Game Cook Off in ‘95 or ‘96.

After he left WAFB he opened his own restaurant. During the spring/summer of 02 we frequented it for lunch and really enjoyed but we noticed a sudden drop in quality of the food and demeanor of Vernon. He looked terrible too and was from what I heard was drinking heavily. In June of that summer he committed suicide.

was looking for something different to make for dinner tonight

can someone help me understand the part where you make an omelet and then roll the meat over it??

i'm not quite getting how that part of the recipe comes together.

so you cook the omelet...then set it on top of the meat in the 10x12 pan..then pour the crawfish mixture on top..then how/what do you do to keep it from leaking out when you roll the meat? do you create a pocket in the middle of the meat or something?


eta i've never made meatloaf before so rolling something into it may be a common technique i'm not familiar with. just thrown off by the whole omelet.

Looks like you use the waxed paper to fold the large “patty” into a loaf over the omelette/crawfish mixture . I would crimp ends and place seam down in baking dish like stuffed bread.

ETA: there’s no 10x12” pan. That’s the patty

Ol Vernon needed some interpreting on this one. He must have been really out there when he wrote it. It’s from one of his later books so…

Would love to see a video of the technique with the omelet on top and then pouring the crawfish and "rolling" the meat into a loaf. Maybe he was rolling a few left handed cigarettes when he wrote this beauty.

Anyone heard of YouTube Cajun chef named chef borque? He's a cross between foghorn leghorn, Vernon Roger and kige Ramsey.
