Wood duck then teal for me. Speckle bellies are frickin delicious but you said duck.

Grey duck is my least favorite of the puddle ducks.

The woodie is the best tasting duck, followed by the Green Wing Teal. Pintail can be #2, but Pintail's diet can get weird. My rankings:


Wood Duck
Green Wing Teal
Pintail
Widgeon
Mallard
Blue Wing Teal
Gadwall

We don't kill/eat enough Canvas Back for me to rank them. But I think they are fine eating...

Mallards/Pintails at 2
Bluebills and Mexican Squealers (skinned due pin feathers) 3
Any of the above can be a rare skunky taste. It happens

All pot roasted and I cringe when I hear people say with sausage as a gumbo. May as well go buy some chicken from the store.

Specs pot roasted are tops of all
Blue Goose gumbo with lots of goose gizzards is great, no sausage but you can whittle a little tasso just to infuse a touch of that flavor and not overpower with smoke flavor.

Kill a bunch of Poule d'eax just for the gizzards isn't bad at all.
