Memorial Weekend Grilling

What are y’all grilling this weekend? I want to get inspiration from what y’all are doing so I can buy it and try it out because I’ve run out of ideas for what I want to cook

1) St Louis ribs with a BBQ/Sriracha/Pineapple finishing glaze.
2) 80/20 Hamburgers mopped with some beef tallow I need to use.
3) Hotdogs
4) Smoked Mac & Cheese? Depends on the timing of the ribs on whether I do this in the oven or not.

I actually might go to Fresh Market and buy the Little Big Meal for this week. I've gotten this one before and the burger patties are massive.
I'd grill the burgers, the corn on the cob the the kit comes with, and maybe some sausage as an appetizer.
$25 Meal Includes:
CHOOSE ONE: Gourmet Burgers (4 ct) - Bacon Cheddar, Portabella Gouda, etc.
CHOOSE ONE: The Fresh Market Sliced Cheese (7 oz)
CHOOSE ONE: Potato or Macaroni Salad (1 lb)
CHOOSE ONE: White or Bi-Color Corn (4 ct)
GET ONE: Soft Golden Hamburger Buns (4 ct)

Winn Dixie has pork butt for .88/lb. throwing on the smoker Sunday.

Gonna swang by the Dixie for my butts as well. Going to the beach in a few weeks and have to provide dinner for extended fam one night. Will smoke 2 or three and vacuum seal. Use later for sandwiches and various forms of tex-mex .

Im doing one of my fall backs that the in-laws love and requested
Pork Loin
Marinated and mopped while grilling in italian, Stubbs chicken marinade, Allegro Hot & Spicy, Teriyaki, Steens, and a little Lea & Perrins woster
Slice into medallions, spoon remaining sauce over medallions and then pour some garlic butter over top and mix.
They never make it to a plate

It's called "flame-grilled"
Can do it a few ways - before while the patties are resting salted, lightly mop both sides before they go on the grill.
If you're worried about the flare-ups you can always put some pre-heated tallow on after they come off the grill while they rest for a minute.

I’m doing smoked chicken thighs on the green egg. I mix dukes Mayo, saracha, a little Worcestershire, and AP Seasoning together. Coat the thighs and cook them indirectly at 250-275. The Mayo cooks off and they always turn out delicious. Of course I’ll be doing hot dogs in the meantime.

All of these are good suggestions. Smoked mac and cheese to go along with a butt sounds great as well. I’m doing a tenderloin Friday night so the butt would be perfect for Saturday or Sunday.

For those that have said butts, do y’all have a go to recipe you wouldn’t mind sharing? I just google big green egg recipes and modify what I like from each one for the most part.

Got a 4 lb brisket I grabbed from Nunu's that I plan to throw on tomorrow morning. That'll be dinner, and the following day may try a smoked queso that we'll re-purpose the brisket in for snacking over the weekend.

I typically slather in mustard, followed by either a Killer Hogs or Meat Church rub. Smoke uncovered over cherry & hickory until the stall - usually around 160ish. Wrap in foil but inside the wrap add Stubb's Pork Marinade, butter, and brown sugar. I usually put the whole wrapped butt directly in an aluminum pan to catch any rendered fat. After it reaches probe tender (205ish) remove from wrap and pan, and reserve any liquid in the wrap and pan. I will typically put it back on the smoker directly, unwrapped, for 10-20 minutes to firm up the bark because I like the caramelized crispy bits. Then return to pan, let rest, then shred and mix into the reserved liquid.

Im gonna smoke a brisket. Did a boston butt a couple wekends ago for the first time (new ceramic kamado owner) and it was amazing.
I was gonna get a brisket at Costco for $3.99 per pound. But then heard a new local meat shop opened up less than a mile down the road so i reached out to them if they had any briskets and they do. But they have Snake River Farms Wagyu briskets. $14.99 per pound. But said he would give me 25% off.

Anyone ever order from this place? Or heard of it? Seems to have really solid reviews. But is it worth spending $150 on a brisket compared to $60 at Costco?

If this is your first time doing a brisket...I wouldn't tackle a Snake River as your first, but it's not my money.

Do a Costco brisket first. Personally I wouldn't do wagyu briskets. The intense marbling is better suited for a steak-type cut rather than a large roast. SRF is reputable though.
