Angostura has a more pronounced flavor than Peychauds. That is your issue.

Luxardo cherry with a little of the cherry syrup
Orange peel
Lemon peel

The El Guapo bitters are stupid expensive... and worth it. The Polynesian Kiss one has upped my tiki drink game so much. It just contains oils you aren't going to be able to get at your grocery store.

I like sazerac rye and luxardo cherry in my old fashioned. I'm also lazy and use Elijah Craig old fashioned syrup

Uptown and old Metry posters may know Mr. James from bartending house parties. He came out with his own bitters a few years back and is crushing it!

I haven’t used Peychauds in years

Get out of here with these truth bombs! Personally feel like the type of cherry is overrated, it’s what I can taste the least and I absolutely love cherries. It’s really more for the gentle sweetness and depth of flavor imo. But I’m not convinced I could taste the difference in a drink in a blind test if it had a luxardo or cheaper cherry. Now in a blind test of just the cherry, absolutely there’s a huge difference.

Angostura and Orange

I like to take a kitchen torch and lightly torch the orange peel before adding it to the OF.

ETA: had an OF at a bar here in Colorado Springs that used their own house made tobacco bitters and it was maybe the best OF I’ve ever had.

Agree. I am not a huge rye fan but it makes for a damn good OF.
