Mine doesn’t do that but I’m several updates behind. Also I typically use my mental alarm clock and wake up 3-5 minutes before my alarm goes off which sucks in and of itself

You can just set it manually and not with Siri. Then it won’t talk back to you. Click on the clock icon and type in your alarm time. Problem solved.
