Someone posted this one here last year, but it's become a favorite for me, and it's pretty healthy as well:

Works just as well in the instapot. In fact most all crock pot recipes work well in the instapot. Just different buttons to push and cook times.

We really like this chili, but the recipe as stated is on the bland side. We add diced jalapenoes and more chili powder and cumin than it calls for. I've been meaning to get some dried chilis to rehydrate and add to it, but haven't yet.

That was me! It's one of our favorites as well.

Also love this one

Beef and Broccoli

I add water chestnuts at the end because I love the crunch.

If you like collard greens, this is a great recipe. They come out perfect everytime. So tender but not mushy.

ETA: the Honey Garlic sauce mentioned above is also excellent with pork loin. The only difference is the cook time.

Carnitas: LINK
Make enough for a crowd for tacos, also freezes beautifully. You can defrost and crisp up in a skillet in just a few minutes.

My favorite instant pot recipe is carnitas, heavy on the poblanos.

not to derail the thread but where did the term "insta pot" come from? is that a knock-off brand like the knights of the roundtable is to POLO?

to contribute to this thread, I second MS roast in the instant pot

I think someone messed it up a long time ago, and people just repeat it.
