Hard to leave the rest off... this could easily be a 10 way tie for first place. You guys and gals continue to impress.

I know you said the chicken was IT 170 but it did not look like it.

It is well documented that sous vide chicken sometimes presents a red hue do to a variety variables. Do a quick search if you want to learn more about the processes in place that cause this phenomenon.

One more thing to remember is that neither ServSafe nor the FDA provide guidance regarding visual indications of when food is considered safe. A calibrated thermometer is the only way to determine that the minimum internal has been achieved.
