What are smoking for Christmas?

You boys putting anything on the smoker for Christmas? For the first year, we are staying home for Christmas Day. I immediately took control of the menu. Looking for ideas. Thinking about doing a brisket.

Smoking a prime rib Saturday for a work Christmas party and smoking a brisket next weekend for my family Christmas. Never done a prime rib so hope if turns out ok.

My father in law wants me to smoke a turkey. He’s growing quite fond of my smoking and he never had smoked turkey. I’d rather fry the turkey just so I don’t have to wake up so dang early to start smoking it. I’m not a fan of smoked turkey. I’d rather do a picnic.

Was thinking a Turkey and a couple of pork tenderloins. Just looking for a good brine recipe for the tenderloins.

I'd love to smoke a turkey after a good 24 hours in my brine, but my wife HAS to have a spiral sliced ham for that holiday. So, ham it is.
We do fried turkey on Thanksgiving, so she really doesn't want another turkey so soon.
I will brine a brisket and use the thicker end for corned beef and the thinner part will go on my smoker for pastrami to have as our New Years Day's meal, along with smothered cabbage, homemade rye bread and a small pot of blackeye peas.

Having Friendsmas(?) at the house next Wednesday. I have a small gress fed brisket I am going to smoke this weekend, then cut up for burnt ends that afternoon. Might just go ahead and throw some steaks and pork chops on with them for the main course.

I've been requested to do a smoked fish dip so I'll for sure do that. Will also probably buy a stuffed turkey or 2-3 stuffed chickens from Heberts and smoke those too.
