Send to LRI and have them blue print it. If you’re wanting to go from .270 to any mag the bolt face will need to be enlarged the can do that and also add a second ejector.
It will need a new finish after that which they can cerakote there or you can have it done locally.
Then just order a new barrel. If you order a remage style barrel you can easily install yourself. You need a barrel nut, action wrench, and a go and no go headspace gage.

Another plunger? What about a M16 style extractor? The extractor on a 700 is really the only thing I kinda don't like
