First attempt at making breakfast tacos, I used Chaqita Pork Chorizo, it's a tube from Rouses in the refrigerated section next to the turkey sausage.
I found it very mediocre to bad. It tasted a lot like potted meat. Is there such thing as "good" Chorizo? Is there a work-around where I can take good pork sausage and throw some taco seasoning on it?
I'm trying to develop a breakfast taco/burrito game and can use any tips or tricks in this department as well. My first foray into chorizo and eggs was extremely meh.

If you stop at your favorite Mexican restaurant, many times they will sell you their raw chorizo that they make in house.

Not sure where you’re located, and I’m sure there are several other good options, but the Mexican grocery store on Hwy 30 in Gonzales has phenomenal chorizo.

I will say that the el suprema brand is pretty dang good if you mix it with other taco meat. That being said, I agree that it is very disappointing on its own.

I'm in Lafayette. We supposedly have a good Mexican supermarket in La Morenita, but I've never been. I may have to go there and look for El Suprema.

Go to your local Mexican grocery store and get some chorizo there. I'm sure it will be 100x better than what you got from Rouses.

You mean casing? It didn't have a casing. It was ground up and shrink wrapped in plastic like a tube of Jimmy Dean.

La Morenita in Lafayette is solid. Good, fresh produce section, meat section has store made chorizo, and prepped meats for grilling (al pastor etc). The kitchen area cranks out tasty stuff. Do yourself a favor and stop by there.

Mexican chorizo is greasy as hell So the mass produced stuff is super greasy

If at rouses, try the cacique chorizo. Its by the smoked sausage.

I much prefer Spanish Chorizo to Mexican Chorizo. They really aren't the same product though.
Mexican Chorizo is soft like Italian Sausage and must be cooked.
Spanish Chorizo is cured, firm, like Pepperoni or Salami, and ready to eat.
