We don't want a farmhouse look but even the newb million dollar houses in Stephan's valley are doing shiplap in the bathrooms.

I recently redid a bathroom and tiled up the wall about 3 feet with subway tile, floor to ceiling subway in the open shower, and put shiplap on the wall behind the sink and mirror, with sheetrock on the remaining half walls. Looks good.
