My first ever brisket

Never had the patience to smoke meat. I’ve had a Kamado Joe Classic II for almost two years and figured its time.

I bought an 11# packer. Seasoned with just salt and pepper. Cooked at 240 for 6.5 hrs. Wrapped for 1.5 hours and let rest for another hour. I probably couldn’t do better if I tried a dozen more times.

Thanks guys. I probably watched 25 YouTube videos....mostly Aaron Franklin. I was most worried about keeping my grill at a steady temp and she cooperated very well.

I used KJ lump with hickory chunks. It turned out great.

I’m one of them...

Looks good, but I’m putting one on about 9-10 this evening for a late lunch tomorrow.

Looks great, and the other poster is correct, that KJ is way too clean.

Yes, it’s JJ George. I have some of their chairs too. I’ve been very pleased with the chairs and table. Not sure what kind of wood he uses.

The pic of my table wasn’t from yesterday but it still looks pretty clean this morning.
