English Muffin Pizzas (Photos)

Just a short post here. I am certain everyone has done this, but for a dreary rainy day, they are a pretty good lunch. At our house, we like English Muffins and we like pizza. Seems a shame not to combine the two.

Need:

English muffins
Pizza Sauce
Pepperoni, or your toppings
Mozzarella cheese
Parmesan cheese

We make and keep frozen portions of our own sauce.

Sauce

15 oz can of crushed tomatoes
1 Tablespoon olive oil
1/2 of a small onion - not chopped
1 Tablespoon dried oregano
1 teaspoons dried basil
1 Teaspoon powdered garlic
If you like your sauce sweeter, add 1 - 3 teaspoons sugar

Combine all ingredients in a sauce pan and cook for 20 minutes over low heat. Do not chop the onion. Simmer it in the sauce and remove at he end. Cool the sauce and freeze in 2 or 3 Tablespoon portions in muffin tins. When frozen, remove and store in ziplock freezer bags in your freezer. IT seems to keep fine for up to 3 months.

To use the sauce, thaw in a microwave bowl, using 30 second pulses, until the sauce thaws, then stir and use


Making the pizzas:


Preheat oven to 400 degrees F

Split the English muffins, then toast them in toaster, toaster oven, or under the broiler.

Add sauce.



Add Mozzarella cheese,



Pepperoni slices



Parmesan Cheese



Cook in oven (on a cookie sheet) until the cheese melts.



You could do with pepperoni, cooked Italian sausage, cooked Hamburger meat, whatever. They are also very good with just cheese. IMO, they don't do very well with multiple ingredients - so I don't do a supreme style on this small sized pizza.

I have done these on hamburger buns, but the muffins are better.

My wife fed me some sort of kale smoothie for lunch so I would crush about 30 of those right now MD

We do these for the kid when we’re feeling particularly lazy. I always make two so I get at least one

Also do them on Ritz crackers or tortillas depending on mood/hunger. My kids smash them

That's probably 10 x better than the Bagel Bites my kids throw down all the time. I would add some red pepper flakes and oregano, like I do with Bagel Bites when I mooch one from my kids...

We make French bread pizza a bunch at home, I suggested English muffin pizzas to the wife and she looked at me like i was speaking Greek. I prefer the English muffin pizza over the French bread pizza.

ETA: Also, used pita bread a bunch for pizza. Really good.

been way too long since we’ve made those

the English muffin is not only the best pizza crust substitute it’s hands down the best and first choice as a hamburger bun

Love em both. Have never in my life even considered this and I don’t know why.

I’ve got everything but pepperoni but I do have sausage. Thanks!

My Mom made those for me all the time as kid in the toaster oven 30+ years ago
