The Homesman, directed by and starring Tommy Lee Jones, is a surprisingly strong recent western. Fits mercenary criteria
Ulzana's Raid, starring Burt Lancaster, is maybe my favorite westerns with the US Military vs. natives conflict.
Run of the Arrow is another great military vs. Natives.
The Man from Laramie isn't as good as Liberty Valance, but it is another classic Jimmy Stewart western about a whole town and its relationship with an Apache tribe.
The Naked Spur is another brilliant Stewart western with a bounty hunter/mercenary.
Wagon Master is one of less-seen John Ford westerns. It's fricking great, and it's about a couple characters you could consider mercenaries guiding people through many conflicts, one of which is Indians.
I couldn't tell you where all these are available. Prime has a ton of westerns. The more obscure ones are often on YouTube.

I recently binge watched a bunch of Lee Van Cleef movies. The last two I watched were Sabata and Death rides a Horse.
