I haven’t done any scientific studies, but not ever getting burnt on ignoring the sell by date on the carton has given me confidence.
Googled it, general rule of thumb you are good at least 2 months after the posted sell by date.
And you prob can stretch it further getting pasteurized eggs.
ETA: And raw.

I gotcha. Supposedly if you drop a raw egg in water and it floats, they’re good. If they sink, they’re not.
And of course, honey never expires, so there’s that, too.

I would think the majority of people on a cruise at this time of year would be elderly.

The Navy keeps eggs on board its ships unrefrigerated for months at a time. No idea what, if anything, is done to the eggs but they come in normal big boxes and don't appear to be anything special.

People who cruise on sailboats don't refrigerate their eggs. Coat them with a little vaseline and keep them on the counter.
