I worked there for 2.5 years during college and they were a prebreaded, frozen Sysco product. Sorry to burst your bubble bro...

The old school Sammy's cheese sticks were made by hand. I've seen it in person. Sammy's post 2016, I don't know.

Pre-2016 are the ones I was talking about. Someone claimed to have the recipe and would post it. Never happened.

What years did you work there? I can remember seeing them cut large blocks of cheese and dipping them in batter in the late 80s early 90s

good question. thick cheese is hard to fry as it will bubble an leak out before the inside is properly warmed in the middle, our "chef" was working on a way to get them like Sammy's
I made a version I called cheese balls by cutting the sysco prebread in 3's and rebattering them. 9 "hand made" balls vs 3 prefab sticks looked way more of a value but the chef & mgmt disagreed.
It coulda been a contender!

Yep. The Brousseau boys were the first around Baton Rouge to have fried cheese and it was huge and good. Had a batter like fried chicken. That a cold beer and a Dagwood was a gut buster.

You can get these at Porch Light Grill in Prairieville, they’re located in the old Tommy’s Fish house building

Been there a couple times, enjoyed it. Food seems very similar to Sammy's of old.

Also, I've made some pretty good mozz sticks at the house.
Buy the good block of mozzarella cheese from Walmart. Cut into logs.
Dip each log into flour. Then dip in eggwash. Then dredge in a mix of Italian bread crumbs/parmesan cheese.
Throw in the fryer until brown.
